Quinoa Side Dish

- 2 vegetable bouillon cubes shopping list
- 1 largeish carrot- diced shopping list
- 1 small onion- diced shopping list
- Several cloves of garlic-minced shopping list
- 2 cups water shopping list
- 1 cup quinoa-rinsed twice because it can be dusty and have foreign objects shopping list
- 3-4 dashes low sodium soy sauce shopping list
- Herbs: parsley, cilantro, dill, (basically any leafy green herb-fresh) A good bunch chopped shopping list
- 1/4 cup toasted walnuts shopping list
How to make it
- Dice onion and carrot
- Mince Garlic
- Rinse quinoa well
- Toast in a large saute pan
- Add bouillon cube, onion and carrot-brown slightly but be careful not to burn
- Add garlic and heat through very briefly
- Add water and bring to a boil
- Add quinoa, cover and reduce heat to simmer for 15 minutes or until liquid is absorbed
- Meanwhile toast walnuts in dry saute pan, chop coarsely
- When quinoa is finished cooking remove from heat
- Add soy sauce, herbs and walnuts -season with pepper
- Enjoy!

I love it.. I used Red Inca Quinoa. Canned carrots and Knorr Sazon seasoning in place of the bullion cubes.. Once it was all done I tossed in a pat of butter and it was BLISS..
