Cute way to serve deviled eggs

Ingredients
  • 12 hard-boiled eggs
  • 2 teaspoons Dijon mustard
  • 2 teaspoons vinegar (white or cider)
  • 1/4 to 1/2 cup mayonnaise
  • 2 red, orange, yellow, or green bell peppers
  • Paprika

Directions
  1. Peel the eggs, then slice each one in half to
  2. make boats. Place the yolks in a medium-sized
  3. bowl and mash them wiht a fork.
  4. Add the mustard and the vinegar, then add the mayonnaise, stirring until the consistency is
  5. smooth but not soupy.
  6. Next, make the sails.
  7. To do this, cut each pepper into 1-inch-wide
  8. strips, then cut the strips into 1-inch squares
  9. and slice each square in half diagonally.
  10. Fill the egg-white halves wiht the yolk mixture.
  11. Stick the sail upright into the filling and sprinkle
  12. with paprika. Makes two dozen.

Cute idea for eggs. I like it. Do you put the mixed egg mixture in a plastic bag (zip lock or folding top) cut off a corner and squirt the mixture into each half? I gave up trying to spoon it on long ago.

Thegoldminer,You can do your eggs that way.I use a cake pastry bag and tip and do my eggs.

Alterations


Try adding to the 12 egg yolks 2-3 tablespoons of sweet pickle relish and 1/4 teaspoon horseradish. You may want to cut back to 1/4 cup of mayo now that you are adding in the relish as it provides liquid. I didn't see any salt or pepper. They will enhance the flavor. Light on the salt, easy to over salt. Arrrrrrrrr, sail on, JJ.
