Greek-style Tuna Salad

- 1 cup orzo, uncooked shopping list
- 1 (61/8) can solid white tuna, drained and flaked shopping list
- 2 cups chopped tomato shopping list
- 1/2 cup crumbled feta cheese shopping list
- 1/4 cup chopped purple onion shopping list
- 3 Tbs sliced ripe olives shopping list
- 1/2 cup red wine vinegar shopping list
- 2 Tbs water shopping list
- 2 Tbs olive oil shopping list
- 1 clove garlic, minced shopping list
- 1/2 tsp dried basil shopping list
- 1/2 tsp dried oregano shopping list
- green leaf lettuce (optional) shopping list
How to make it
- Cook orzo according to package directions; drainrinse with cold water and drain again
- Combine orzo, tuna, tomato, feta, onion and olives in a large bowl
- toss gently
- Combine vinegar, water, olive oil, garlic,basil and oregano in container of an electric blender;
- Cover and process until smooth, stopping once to scrape down sides.
- Pour vinegar mixture over pasta mixture and toss gently.
- Cover and chill thoroughly,
- Serve on lettuce leaves if desired.
