Mussels In The Oven Recipe
A different way to cook mussels, the kids love it

Ingredients
  • 600 gr potatoes peeled and sliced.
  • 7 1/2 dl chicken broth ( cube).
  • 2 big onions sliced.
  • 2 cloves garlic sliced.
  • 3 tbs olive oil.
  • 2 eggs .
  • 1 c sour cream or Greek yoghurt.
  • 2 big tomatoes sliced.
  • 400 gr mussels without shell.
  • 1/4 c white vinegar.
  • 1 c water.
  • 1 ts thyme.
  • Salt pepper to taste.
  • 1/2 ts oregano.
  • 125 gr shredded cheese, ( pecorino or parmesan or any hard hard old cheese).

Directions
  1. Cook potatoes 7 min in the chicken broth ca till almost done.
  2. Keep 1 dl of the broth.
  3. Cook mussels in 1 c water and the vinegar 5 min.
  4. Saute on low heat onion and garlic in olive oil till golden brown 10 min.
  5. Beat eggs with sour cream or Greek yoghurt, add salt and pepper to taste.
  6. Grease an oven tray with olive oil and put potato slices in it, add broth.
  7. Put onion and garlic on the potatoes and top with mussels.
  8. Add tomato slices and top with thyme and oregano.
  9. Add egg mixture and top with shredded cheese.
  10. preheat oven to 175 C and bake 30 min, till golden brown.
