How to make it

  • Prepare meatloaf by combining all ingredients in a large bowl, mixing well and adding enough bread crumbs to make a meat loaf mixture.
  • Place mixture into a large 9 x 5 loaf pan.
  • Bake in a 350F oven 1 to 1 1/4 hours or until done and browned.
  • Drain off fat.
  • Cool completely.
  • May refrigerate and then reheated later.
  • To BAke:
  • roll out a thawed puff pastry sheet thinly with a rolling pin.
  • Wrap meat loaf in pastry.
  • Bake in a 350 to 375 Oven about 30 to 45 minutes or pastry is golden.
  • Remove from oven and let cool a few minutes before slicing.
  • Serve with a gravy if desired.
  • This is a beautiful presentation and the basil pesto add a wonderful flavor!
