Meat Loaf Wellinton Recipe
I decided to prepare a pesto flavored meatloaf and enclosed it in puff paste and served with a mushroom gravy. Before I could take a photo, it was sliced! This is really appealing to the eye and tastes wonderful!

Ingredients
  • 3 lbs ground turkey ( or whatever ground meat you prefer )
  • 1/2 cup of home made or bottled pesto sauce
  • 2 eggs
  • 1 1/2 cups dried bread crumbs or ewnough to bind
  • salt, pepper, garlic and onion powder to taste
  • 1/2 pkg of puff pastry or 1 sheet, thawed

Directions
  1. Prepare meatloaf by combining all ingredients in a large bowl, mixing well and adding enough bread crumbs to make a meat loaf mixture.
  2. Place mixture into a large 9 x 5 loaf pan.
  3. Bake in a 350F oven 1 to 1 1/4 hours or until done and browned.
  4. Drain off fat.
  5. Cool completely.
  6. May refrigerate and then reheated later.
  7. To BAke:
  8. roll out a thawed puff pastry sheet thinly with a rolling pin.
  9. Wrap meat loaf in pastry.
  10. Bake in a 350 to 375 Oven about 30 to 45 minutes or pastry is golden.
  11. Remove from oven and let cool a few minutes before slicing.
  12. Serve with a gravy if desired.
  13. This is a beautiful presentation and the basil pesto add a wonderful flavor!
