Meat Loaf Wellinton

- 3 lbs ground turkey ( or whatever ground meat you prefer ) shopping list
- 1/2 cup of home made or bottled pesto sauce shopping list
- 2 eggs shopping list
- 1 1/2 cups dried bread crumbs or ewnough to bind shopping list
- salt, pepper, garlic and onion powder to taste shopping list
- 1/2 pkg of puff pastry or 1 sheet, thawed shopping list
How to make it
- Prepare meatloaf by combining all ingredients in a large bowl, mixing well and adding enough bread crumbs to make a meat loaf mixture.
- Place mixture into a large 9 x 5 loaf pan.
- Bake in a 350F oven 1 to 1 1/4 hours or until done and browned.
- Drain off fat.
- Cool completely.
- May refrigerate and then reheated later.
- To BAke:
- roll out a thawed puff pastry sheet thinly with a rolling pin.
- Wrap meat loaf in pastry.
- Bake in a 350 to 375 Oven about 30 to 45 minutes or pastry is golden.
- Remove from oven and let cool a few minutes before slicing.
- Serve with a gravy if desired.
- This is a beautiful presentation and the basil pesto add a wonderful flavor!
