Shrimp With Feta Cheese Recipe
This recipe blends a trio of herbs with shrimp for a great entree. Dish may also be used as an appetizer.

Ingredients
  • 1 pound unpeeled, large fresh shrimp
  • 1 Tbs butter
  • 1tsp lemon juice
  • 1 medium onion, halved and thinly sliced
  • 2 Tbs olive oil
  • 1 garlic clove, minced
  • 3 to 4 plum tomatoes, coarsley chopped
  • 2 tsp chopped fresh oregano
  • 1 tsp chopped fresh basil
  • 1 tsp chopped fresh parsley
  • 1 cup crumbled feta cheese
  • Pasta
  • Crusty bread

Directions
  1. Peel shrimp and devein, if desired. Set aside
  2. Melt butter in a large skillet over medium heat.
  3. Add shrimp and lemon juice and saute 2 to 3 minutes or just until tender.
  4. Add wine, clam juice and garlic.
  5. Reduce heat, and simmer 10 minutes.
  6. Add chopped tomato and simmer 5 minutes more
  7. Stir in shrimp, oregano.basil, and parsley
  8. Sprinkle shrimp mixture with feta cheese
  9. Serve over hot cooked pasta for entree
  10. Serve with crusty bread for an appetizer.
