Chicken Cakes With Remoulade Sauce Recipe
The cakes are not only a terrific entree but by making the cakes smaller works as an appetizer.

Ingredients
  • 2 Tbs butter
  • 1/2 medium-size red bell pepper, diced
  • 4 green onions, thinly sliced
  • 1 garlic clove,pressed
  • 3 cups chopped cooked chicken
  • 1 large soft breadcrumbs
  • 1 large egg, lighty beaten
  • 1 Tbs Creole mustard
  • 2 tsp Creole seasoning
  • 1/4 cup vegetable oil
  • Remoulade Sauce
  • 1 cup mayonnaise
  • 3 green onions, sliced
  • 2 Tbs Creole mustard
  • 2 garlic cloves, pressed
  • 1 TBs chopped fresh parsley
  • 1/4 tsp ground red pepper

Directions
  1. Melt butter in a large skillet over medium heat.
  2. Add bell pepper, green onions and garlic and saute 3 to 4 minutes until vegetables are tender.
  3. Stir together bell pepper mixture, chicken and next 5 ingredients in a bowl.
  4. Shape chicken mixture into 8 (31/2 inch) patties
  5. Fry 4 patties in 2 tablespoons hot oil in a large skillet over medium heat 3 minutes on each side or until golden brown. Drain on paper towels.
  6. Repeat procedure with remaining 2 tablespoons oil and patties. Serve immediately with Remoulade Sauce.
  7. Remoulade Sauce
  8. Stir together mayonnaise, green onions, mustard, garlic, parsley, and red peper until sauce is well blended.
