Israeli Couscous and broccoli Salad

- 1 cup Israeli couscous shopping list
- 1 head of broccoli, florets only, save stems for another use shopping list
- 1 red apple ( skin on ) shopping list
- 1 cup shredded or juliene carrots shopping list
- 4 cherry tomatoes shopping list
- extra virgin olive oil shopping list
- key lime juice shopping list
- 6 lemon verbena leaves ( or zest from grated lemon) shopping list
- salt and frssh cracked pepper to taste shopping list
How to make it
- Cook cuscous to pkg directions
- Cook broccoli till crisp tender
- In a large bowl add drained , rinsed and cooled couscus, broccoli florets, carrots, apples bite sized chopped, tomatoes cut up and chopped lemon verbena leaves ( or zest of lenon)
- Add enough extra virgin olive oil and key lime juice to moisten.
- Season with salt and pepper
- Serve or let come to room temp if chilled
