Make meatballs ahead of time, in large quantity on the week-end; shape them while watching TV freeze or pre-cook to have them ready and save time, when you need them for spaghetti sauce, stew, appetizers, ragout, etc...

Ingredients
  • 5 lbs (2 kg) regular or lean ground beef (your preference)
  • 1 cup (250 ml) dry bread crumbs
  • 1 medium onion, finely chopped
  • 3 tsp (15 ml) salt
  • 1/2 tsp (2 ml) dry mustard
  • 3 large eggs, slightly beaten

Directions
  1. Place ground beef in a large mixing bowl and combine with remaining ingredients. Shape mixture into meatballs, a large spoonful at a time. Place meatballs on a lightly oiled baking sheet; cover with plastic wrap and place in the freezer for at least 2 hours until meatballs are firm.
  2. Remove them from the freezer and dive into 5 equal portions (about 24 meatballs each); place in plastic freezer bags or freezer containers. Cover tightly and freeze for up to 6 months.
  3. NOTE: You can precook the meatballs before freezing to save more time. Place on lightly oiled foil-lined baking sheet or broiler pan. Bake at 350 degrees F (180 C) for 12 to 15 minutes until lightly browned. Cool, then pack about 25 at a time into plastic freezer bags or containers. Cover and freeze until ready to use.
