Sausage Stuffed Acorn Squash Recipe
Another one of the many recipes from my family that I try to improve. This is a very forgiving recipe that you can absolutley substitute ingredients that you prefer. Awesome with a salad or some wild rice.

Ingredients
  • 1 acorn squash halved and seeds removed
  • 1/2 lb hot sausage (sweet works well too)
  • Handful of breadcrumbs (I use corn bread crumbs)
  • 1/4 cup melted butter or butter substitute
  • 2 garlic cloves minced
  • 1/2 cup minced mushrooms
  • 1/2 cup minced sweet peppers (green, red etc.)
  • 1/2 cup cubed swiss cheese
  • 1/2 tablespoon chopped fresh sage
  • salt and pepper to taste

Directions
  1. Heat oven to 400 and bake squash until tender reduce heat to 350
  2. Remove pulp from squash leaving a shell, reserve pulp
  3. Brown sausage and drain
  4. Saute garlic, mushrooms, peppers and pulp in melted butter for about 3 minutes. Cool slightly
  5. Combine breadcrumbs, sausage, cooled veggies, cheese, sage and salt + pepper, mix well
  6. Fill acorn squash shells with stuffing mixture
  7. Bake 45 minutes
