Sausage Stuffed Acorn Squash

- 1 acorn squash halved and seeds removed shopping list
- 1/2 lb hot sausage (sweet works well too) shopping list
- Handful of breadcrumbs (I use corn bread crumbs) shopping list
- 1/4 cup melted butter or butter substitute shopping list
- 2 garlic cloves minced shopping list
- 1/2 cup minced mushrooms shopping list
- 1/2 cup minced sweet peppers (green, red etc.) shopping list
- 1/2 cup cubed swiss cheese shopping list
- 1/2 tablespoon chopped fresh sage shopping list
- salt and pepper to taste shopping list
How to make it
- Heat oven to 400 and bake squash until tender reduce heat to 350
- Remove pulp from squash leaving a shell, reserve pulp
- Brown sausage and drain
- Saute garlic, mushrooms, peppers and pulp in melted butter for about 3 minutes. Cool slightly
- Combine breadcrumbs, sausage, cooled veggies, cheese, sage and salt + pepper, mix well
- Fill acorn squash shells with stuffing mixture
- Bake 45 minutes
