How to make it

  • Heat oven to 400 and bake squash until tender reduce heat to 350
  • Remove pulp from squash leaving a shell, reserve pulp
  • Brown sausage and drain
  • Saute garlic, mushrooms, peppers and pulp in melted butter for about 3 minutes. Cool slightly
  • Combine breadcrumbs, sausage, cooled veggies, cheese, sage and salt + pepper, mix well
  • Fill acorn squash shells with stuffing mixture
  • Bake 45 minutes
