How to make it

  • Place chuck roast in large crockpot and sprinkle with the salt and pepper, chili powder and cumin.
  • Add the remaining ingredients and simmer on high for 5 hours or on low for 7-8 hours.
  • Shred the meat with a fork and simmer on high for additonal 10-15 minutes.
  • Serve in enchiladas, tacos or on crusty rolls with the juice for dipping.

    I discovered this recipe and printed it out last spring. My whole family loved it! Unfortunately, we moved during the summer and I lost the recipe so I've been searching for this site for over a week to find it again. So glad I did and I made sure to sign up this time!!

    This sounds so delicious! I have a recipe almost like this for the crockpot. You might like my Adobo Encrusted Pork Roast. It is oven baked but absolutely DELICIOUS. Been making it for years, and it is always a big, big hit. Thanks for sharing this recipe! :)

    Well Minkie, on my daugter's advice (Irishmama) I made this roast today - I used ALL the spices...all I can say is FANTASTIC! I shredded the meat when it was done, and chopped up the onions etc that were in the broth - rolled it in corn tortillas, topped with just a bit of enchilada sauce (just to keep the shells from drying out during baking - I didn't want to disturb the wonderful flavor of the meat). When heated through, we topped it with some sour cream and cheese and CLEANED OUR PLATES. I highly encourage anyone who likes a bit of spice to give this a try. Great post, minkie, and we thank you!

    This was FANTASTIC! Five stars all the way! We make roast in the crockpot all the time, but it seems like it's always just a variation on the same theme. This was unique and delicious. I did reduce to 1 tsp of chili powder b/c I can't handle extreme spice, and it was still pretty spicy but tolerable for me. And I'll deal with spice if the flavor that goes with it is good, which this surely was!

    For a little extra kick, top it with Sargento's Chipotle Cheddar. I went with regular cheddar, but DH loved it this way. He said it reminds him a bit of chili, but better!

    This sounds like a really interesting twist on roast, and I LOVE anything I can make in the crockpot. My DH will like that it's got some kick. I'll be trying this out soon!
