Chipotle Roast

- 3 lbs chuck roast, trimmed of visible fat shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon pepper shopping list
- 2 teaspoons chili powder shopping list
- 2 teaspoons cumin shopping list
- 3 chipotle chiles in adobo, chopped shopping list
- 1 (4 ounce) can green chilies shopping list
- 1 (7 ounce) can salsa verde shopping list
- 1 cup sliced onions shopping list
- 3 teaspoons minced garlic shopping list
- 1 cup beef broth shopping list
How to make it
- Place chuck roast in large crockpot and sprinkle with the salt and pepper, chili powder and cumin.
- Add the remaining ingredients and simmer on high for 5 hours or on low for 7-8 hours.
- Shred the meat with a fork and simmer on high for additonal 10-15 minutes.
- Serve in enchiladas, tacos or on crusty rolls with the juice for dipping.

This sounds like a really interesting twist on roast, and I LOVE anything I can make in the crockpot. My DH will like that it's got some kick. I'll be trying this out soon!
