These are somewhere between a savory cookie and a cracker. Crispy little crackers with a great cheese flavor and a little zing from cayenne and hot sauce. The crisp rice is a nice surprise and enhances the crispiness.

Ingredients
  • 1 c. 'stick' butter or margarine, softened (2 sticks)
  • 2 c. all-purpose flour
  • 2 c. shredded sharp Cheddar cheese
  • 1 tsp. salt
  • 1/2 tsp. cayenne pepper
  • 3 drops hot pepper sauce (like Tobasco or Frank's)
  • 1/2 c. grated Parmesan cheese
  • 1 c. crisp rice cereal (like Rice Krispies)

Directions
  1. ***Prep/Cook time include chill time and entire baking time.***
  2. In a large mixing bowl, combine all ingredients. Stir by hand until well blended. Wrap dough in plastic wrap and chill for 30 minutes.
  3. Preheat oven to 325 degrees F. Form dough into 1-inch balls and place on lightly greased baking sheet. Using a fork dipped in flour, flatten each ball in a crisscross pattern. Bake 12 - 15 minutes or until lightly browned. Remove from pan and cool on wire rack. Store in airtight container. Makes about 6 dozen.
