Wartime Rhubarb Pie Recipe


WARTIME RHUBARB PIE Recipe
This is my neighbours war time recipe, made when sugar was limited. Made with scarcely any sugar at all. If like me you love rhubarb you will love this.

Ingredients
  • Short crust pastry
  • 2lb chopped rhubarb
  • 1lb stoned cooking dates (may need more depending on size of dish)
  • 1lb raisins (may need more depending on size of dish)
  • 1 tablespoon sugar

Directions
  1. Pre-heat oven 220c/gas 7
  2. Line a pie dish with short crust pastry
  3. cut some stoned cooking dates into very thin slices and put a layer in the bottom of the dish
  4. cover with a layer of rhubarb (chopped)
  5. sprinkle over the sugar
  6. put a layer of raisins
  7. continue with the layers until the dish is full
  8. cover with pastry, slit in the top
  9. put on oven tray (in case the juice boils over)
  10. place into oven for 20 min's
  11. lower heat to 150c/gas 2
  12. cook for about half an hour or until golden brown

Thank You for posting this. I love recipes like this. I remember my Grandmothers talking about what it was like cooking during the war when they had food rationing. So I've been collecting a few of them here and there. I've bookmarked this to add to that.
