Easy Roasted Chicken Marsala

- 4 1/2 lb chicken - cut into 8 pieces shopping list
- 3/4 t dried Italian seasoning shopping list
- 3/4 t salt shopping list
- 10 oz pkg mushrooms -sliced - about 2 1/4 C shopping list
- 1 red pepper - cut into 2"x1" pieces shopping list
- 1 sweet onion - cut into 1/4" thick wedges shopping list
- 1 1/2 C marsala wine or white grape juice shopping list
- 2 T All-purpose flour shopping list
- 1 T fresh parsley - chopped shopping list
How to make it
- Preheat oven 425*
- Place chicken in roasting pan.
- Sprinkle with 1/2 t Italian Seasoning and 1/2 t salt.
- In bowl, toss mushrooms, red pepper, and onion with remaining Italian Seasoning and salt.
- Arrange veggies around chicken and pour wine or juice into pan.
- Roast 50 minutes or until chicken is no longer pink near bone.
- Transfer chicken and veggies to serving platter and cover with foil to keep warm.
- In a bowl, whisk together 1/4 C water and flour.
- Skim off excess fat from juices in roasting pan.
- Place pan over two burners on medium-high heat.
- Whisking in flour mixture, cook about 5 minuted until thickened.
- Spinkle chicken with parsley and serve with sauce.
- Goes great with rice or noodles.
