Glazed Spiced Pumpkin Bars

- Bars: shopping list
- 2 cups original bran cereal shopping list
- 1/2 cup canola or vegetable oil shopping list
- 1/2 cup orange juice shopping list
- 1 can (15 oz) pumpkin (not pumpkin pie mix) shopping list
- 2 eggs shopping list
- 1 1/2 cups all-purpose flour shopping list
- 1 1/2 cups granulated sugar shopping list
- 2 teaspoons baking powder shopping list
- 1 teaspoon ground cinnamon shopping list
- 1 teaspoon baking soda shopping list
- 1/2 teaspoon ground ginger shopping list
- 1/4 teaspoon salt shopping list
- 1 cup chopped walnuts shopping list
- Glaze: shopping list
- 1 cup powdered sugar shopping list
- 4 to 6 teaspoons orange juice shopping list
How to make it
- Heat oven to 350°F. Spray, or grease and flour 15x10x1-inch pan. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
- In large bowl, beat oil, 1/2 cup orange juice, the pumpkin and eggs on low speed with electric mixer until well blended. Stir in cereal; let stand 10 minutes.
- Beat in remaining bar ingredients except walnuts on low speed until well blended. Stir in walnuts. Spread evenly in pan.
- Bake 35 to 40 minutes or until top springs back when touched lightly in center. Cool completely, about 1 hour.
- In small bowl, mix powdered sugar and enough orange juice for desired drizzling consistency. Drizzle over cooled bars. For bars, cut into 8 rows by 4 rows.
