Creamy Spinach Souffle

- 4 tablespoons butter shopping list
- 1 tablespoon flour shopping list
- 1/2 cup whipping cream shopping list
- 7 ounces frozen spinach chopped shopping list
- 1/4 cup whipping cream shopping list
- 5 eggs separated shopping list
- 1/4 teaspoon finely ground black pepper shopping list
- 1/4 teaspoon salt shopping list
- 1/8 teaspoon cayenne pepper shopping list
- 1/8 teaspoon freshly ground nutmeg shopping list
- butter to grease ramekins shopping list
How to make it
- Melt butter in heavy saucepan over medium heat then add flour and cook 5 minutes.
- Slowly stir in 1/2 cup whipping cream and season with salt, pepper, cayenne and nutmeg.
- Reduce heat and cook 30 minutes then remove from heat
- Preheat oven to 400 then grease 6 ramekins with butter.
- In separate pot bring 1 cup water to a boil then add a little salt and frozen spinach.
- Cook 5 minutes then drain and stir spinach into sauce.
- Add 1/4 cup cream and egg yolks the stir well.
- Whisk egg whites to stiff peaks then carefully combine with spinach mixture.
- Avoid deflating foam as much as possible then distribute equally over ramekins
- Bake 20 minutes then serve immediately.
