How to make it

  • Melt butter in heavy saucepan over medium heat then add flour and cook 5 minutes.
  • Slowly stir in 1/2 cup whipping cream and season with salt, pepper, cayenne and nutmeg.
  • Reduce heat and cook 30 minutes then remove from heat
  • Preheat oven to 400 then grease 6 ramekins with butter.
  • In separate pot bring 1 cup water to a boil then add a little salt and frozen spinach.
  • Cook 5 minutes then drain and stir spinach into sauce.
  • Add 1/4 cup cream and egg yolks the stir well.
  • Whisk egg whites to stiff peaks then carefully combine with spinach mixture.
  • Avoid deflating foam as much as possible then distribute equally over ramekins
  • Bake 20 minutes then serve immediately.
