This is a fantastic recipe that I obtained from a friend a few months ago. She made 24 of these for a dinner party and they were all eaten and left people asking for more. Incredible. Enjoy

Ingredients
  • 4 tablespoons butter
  • 1 tablespoon flour
  • 1/2 cup whipping cream
  • 7 ounces frozen spinach chopped
  • 1/4 cup whipping cream
  • 5 eggs separated
  • 1/4 teaspoon finely ground black pepper
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon freshly ground nutmeg
  • Butter to grease ramekins

Directions
  1. Melt butter in heavy saucepan over medium heat then add flour and cook 5 minutes.
  2. Slowly stir in 1/2 cup whipping cream and season with salt, pepper, cayenne and nutmeg.
  3. Reduce heat and cook 30 minutes then remove from heat
  4. Preheat oven to 400 then grease 6 ramekins with butter.
  5. In separate pot bring 1 cup water to a boil then add a little salt and frozen spinach.
  6. Cook 5 minutes then drain and stir spinach into sauce.
  7. Add 1/4 cup cream and egg yolks the stir well.
  8. Whisk egg whites to stiff peaks then carefully combine with spinach mixture.
  9. Avoid deflating foam as much as possible then distribute equally over ramekins
  10. Bake 20 minutes then serve immediately.
