How to make it

  • Position rack in center of oven then preheat to 450.
  • Grind crackers and sugar in processor until fine crumbs form.
  • Add butter then process until crumbs are slightly moist.
  • Press onto bottom of spring form pan with 2-1/2” sides.
  • Bake until set about 12 minutes then transfer to rack and cool completely.
  • Maintain oven temperature.
  • Beat cream cheese and sugar in large bowl until smooth.
  • Add eggs, liqueur, peel and vanilla then beat just until blended.
  • Pour filling into crust lined pan and bake 15 minutes then reduce heat to 300.
  • Bake 55 minutes longer then transfer cake to rack and run knife around sides to loosen.
  • Cool then chill cheesecake overnight and serve with sauce.
  • To make sauce stir sugar and water in heavy saucepan over medium low heat.
  • Stir constantly until sugar dissolves then increase heat and boil 10 minutes.
  • Remove from heat and gradually add cream then stir over low heat until smooth.
  • Remove from heat and whisk in liqueur then cool completely and pour over cheesecake.
