Orange Cheesecake With Orange Caramel Sauce

- 11 whole graham crackers broken shopping list
- 1/4 cup granulated sugar shopping list
- 1/4 cup unsalted butter melted shopping list
- Filling: shopping list
- 32 ounces cream cheese at room temperature shopping list
- 1-1/4 cups granulated sugar shopping list
- 6 large eggs shopping list
- 3 tablespoons orange liqueur shopping list
- 5 teaspoons finely grated orange peel shopping list
- 2 teaspoons vanilla extract shopping list
- caramel orange Sauce: shopping list
- 2 cups granulated sugar shopping list
- 1/2 cup water shopping list
- 1/2 cup whipping cream shopping list
- 3 tablespoons orange liqueur shopping list
How to make it
- Position rack in center of oven then preheat to 450.
- Grind crackers and sugar in processor until fine crumbs form.
- Add butter then process until crumbs are slightly moist.
- Press onto bottom of spring form pan with 2-1/2” sides.
- Bake until set about 12 minutes then transfer to rack and cool completely.
- Maintain oven temperature.
- Beat cream cheese and sugar in large bowl until smooth.
- Add eggs, liqueur, peel and vanilla then beat just until blended.
- Pour filling into crust lined pan and bake 15 minutes then reduce heat to 300.
- Bake 55 minutes longer then transfer cake to rack and run knife around sides to loosen.
- Cool then chill cheesecake overnight and serve with sauce.
- To make sauce stir sugar and water in heavy saucepan over medium low heat.
- Stir constantly until sugar dissolves then increase heat and boil 10 minutes.
- Remove from heat and gradually add cream then stir over low heat until smooth.
- Remove from heat and whisk in liqueur then cool completely and pour over cheesecake.
