How to make it

  • Place beets in large pot and cover with broth and juice
  • bring to boil then lower to simmer partially covered 45 min.
  • remove cool and slip off skins.
  • remove with slotted spoon to bowl
  • halve or quarter and place on cookie sheet
  • drizzle a little oil and roast at 325-400 for about 10-15 minutes
  • do not allow to dry out
  • strain broth and return to pot
  • melt butter in large ihgh
  • add peeled, cored and sliced apple and saute until carmelized 10 min
  • puree beets in processor with apples in food processor adding broth through top tube
  • return puree to pot
  • combine with broth and add lemon salt and pepper
  • --------------------
  • OR
  • make one batch with yellow and one with red beets
  • halving the other ingredients to make 2 batches
  • when serving (hot or cold) put red beet mixture in first and then swirl yellow beet mixture in
  • add creme fraiche in center or serve on the table
