Easy Bean Tomato Soup

- 1 can assorted beans shopping list
- 1 large can diced tomatoes (do NOt drain) shopping list
- 2 cloves garlic shopping list
- bunch fresh basil shopping list
- 2 tbsp. olive oil shopping list
- 3 cups vegetable stock/or water shopping list
- 1 can tomato paste shopping list
- red pepper flakes shopping list
- salt and pepper shopping list
- some grated cheese(whatever you like, i used mozzarella) shopping list
- pasta. i use macaronis shopping list
How to make it
- Rinse beans, place in saucepan with 3 cups veg.stock/water
- add minced garlic and salt, bring to a boil and simmer for 15 mins
- add tomato paste, fill empty paste can with water and add that too
- add chopped up basil(save some for garnish too if u want)
- add diced tomatoes and olive oil, simmer until thick, about 15 mins, meanwhile cook pasta according to package
- drain pasta, toss into large bowl with a bit of olive oil. (keep and store separately from the soup)
- ladel noodles, then soup. garnish with cheese, red pepper flakes, and basil
