Melt In Your Mouth Sweet Potato Biscuits With Orange Honey Butter

- 1 cup White Lily Self-Rising flour shopping list
- 1/8 teaspoon cinnamon shopping list
- 1 tablespoon packed brown sugar shopping list
- 1/2 teaspoon baking powder shopping list
- 4 tablespoons unsalted butter (1/2 stick) shopping list
- 1 can sweet potatoes OR 1 large sweet potato cooked and peeled shopping list
- I sometimes bake 1 sweet potato in the microwave shopping list
- FRESH orangE honey butter shopping list
- Grated rind from a fresh orange shopping list
- 1 stick unsalted butter, softened shopping list
- 3 tablespoons honey or to taste shopping list
How to make it
- In large bowl, combine flour, cinnamon, brown sugar, baking powder
- Divide butter into pieces and scatter on top of flour
- Work pieces into flour with pastry cutter, knives, or fingertips until pieces are size of peas
- Mash enough sweet potatoes to measure 3/4 cup
- Add, stirring only to moisten flour and hold dough together
- Turn dough onto lightly floured surface
- Knead gently 2 to 3 strokes
- Using a light touch, pat* or roll to about 1/2 inch thickness
- *I like to "pat" out to 1/2 inch thickness
- Cut biscuits using a floured 2 inch cutter, leaving as little dough between cuts as possible
- Gather remaining dough, pat out again, cut
- Place biscuits on baking pan, sides touching for soft southern style biscuits
- If crisp biscuits are prefered, place close together, but not touching
- Bake in a 400 degree oven for about 10 to 12 minutes or until tops are browned
- Serve hot with FRESH ORANGE HONEY BUTTER
- For this delicious butter, mix orange peel, butter, and honey together until smooth
