How to make it

  • In large bowl, combine flour, cinnamon, brown sugar, baking powder
  • Divide butter into pieces and scatter on top of flour
  • Work pieces into flour with pastry cutter, knives, or fingertips until pieces are size of peas
  • Mash enough sweet potatoes to measure 3/4 cup
  • Add, stirring only to moisten flour and hold dough together
  • Turn dough onto lightly floured surface
  • Knead gently 2 to 3 strokes
  • Using a light touch, pat* or roll to about 1/2 inch thickness
  • *I like to "pat" out to 1/2 inch thickness
  • Cut biscuits using a floured 2 inch cutter, leaving as little dough between cuts as possible
  • Gather remaining dough, pat out again, cut
  • Place biscuits on baking pan, sides touching for soft southern style biscuits
  • If crisp biscuits are prefered, place close together, but not touching
  • Bake in a 400 degree oven for about 10 to 12 minutes or until tops are browned
  • Serve hot with FRESH ORANGE HONEY BUTTER
  • For this delicious butter, mix orange peel, butter, and honey together until smooth

    Oh very good post. Sweet potatoes are a big fav in our household. Can I use any type of self-rising flour? I live in the northeast and have never heard of it.
