Hollys Tortellini Soup Recipe
This recipe comes from a friend. Very good. I think you could swap out the sausage with ground beef, but then you'd lose the good Italian flavors...

Ingredients
  • 1 lb Italian sausage
  • 1 lg onion, chopped
  • 1 cl garlic, pressed
  • 3 cn beef broth (14 1/2-ounce)
  • 2 cn diced tomatoes, undrained
  • (14 1/2-ounce)
  • 1 cn tomato sauce (8-ounce)
  • 1 c dry red wine
  • 2 carrots, thinly sliced
  • 1 tb sugar
  • 2 ts Italian seasoning
  • 2 sm zucchini, sliced
  • 1 pk cheese-filled tortellini
  • (9 oz)
  • 1/2 c shredded Parmesan cheese

Directions
  1. Discard the sausage casings. Cook sausage, onion, and garlic in a Dutch oven over medium-high heat, stirring until sausage crumbles and is no longer pink; drain.
  2. Return mixture to pan. Stir in broth and next 6 ingredients; bring to a boil.
  3. Reduce heat; simmer 30 minutes. Skim off fat.
  4. Stir in zucchini and tortellini; simmer 10 minutes.
  5. Sprinkle each serving with cheese.
