Healthy Mediteranean Salad Recipe
I love making this Salad on a Saturday afternoon. It is quick, easy and really healthy. Learned to make it at a Health Spa. It is quite filling - if you stick to all the ingredients. Enjoy!

Ingredients
  • Rub the inside of a wooden bowl with a garlic clove (thats cut in half)
  • Line the bowl with a bed of lettuce (use your favourite - I like Iceberg)
  • Place on top of the lettuce:
  • 4 small tomatoes – cut in quarters
  • 1 cup of shredded cooked green beans
  • 6-8 small potatoes, cooked in skin and cut in half
  • 2 hard-boiled eggs cut in quarters (optional)
  • 1 green pepper cut in thin strips
  • 1 medium onion cut in thin slices.
  • 10-12 Calamata Olives (I like more so add as many as you like)
  • 250g Feta Cheese, cubed or crumbled

Directions
  1. Squeeze half a lemon over salad just before serving. (Or use your favourite salad dressing if you prefer. I’ve used anything from Caesar dressing, Thousand Island or French)
  2. Serve with Fresh Garlic & Wholewheat Bread.
