Middle-easterny potato salad

- 1.5 kg baby potatoes shopping list
- 6 spring onions, (schallots), sliced shopping list
- 1/2 cup natural yoghurt shopping list
- 2 Tbsp lemon juice shopping list
- 1 Tbsp honey shopping list
- 1 Tbsp tahini (sesame paste) ...check the health-food section shopping list
- 1/4 cup fresh mint, chopped shopping list
How to make it
- Boil the potatoes in a big pot of water for about 12 minutes or so...till theyre just tender. drain and let cool before doing anything else with them.
- Combine the yoghurt, lemon juice, honey and tahini in a small bowl.
- when the potatoes are cooled, cut them in half and combine them with the spring onions in a big salad bowl.
- Gently stir through the dressing and mint and you're done!
