How to make it

  • Boil the potatoes in a big pot of water for about 12 minutes or so...till theyre just tender. drain and let cool before doing anything else with them.
  • Combine the yoghurt, lemon juice, honey and tahini in a small bowl.
  • when the potatoes are cooled, cut them in half and combine them with the spring onions in a big salad bowl.
  • Gently stir through the dressing and mint and you're done!

    Wow! Tahini in a potato salad! Never would have thought of that on my own. This salad looks and sounds incredible. Can't wait to try it!
