Ingredients
  • For adobo
  • 2 cups water
  • 1 cup vinegar
  • 6 cloves of garlic (mashed)
  • 2 pinches of pepper 1/2 tsp salt
  • 1/2 K Pork cubes
  • Main recipe
  • 4 medium potatoes (cut into desired shape)
  • 1 medium carrot (cut into desired shape)
  • 1 medium green or red bell pepper
  • 5 cloves of garlic (chopped)
  • 1 medium onion (chopped)
  • 1 small can of green peas or 1 tbsp of fresh
  • 1 200g Del Monte Tomato Sauce (filipino Style)
  • 2 tbsp cooking oil

Directions
  1. In a sauce pan, put all Adobo ingredients including the Pork.
  2. Boil until Pork is tender. If too sour, add enough water to balance.
  3. Add potatoes if meat is semi-tender.
  4. When all nice and soft, set aside with the adobo mixture.
  5. Main Afritada Recipe
  6. In a separate pan, saute the chopped garlic until semi-golden brown
  7. add chopped onions
  8. add the pork and potatoes from the adobo
  9. add carrots
  10. pour the adobo mixture. Add water if necessary
  11. add green peas
  12. simmer for 5- 7 mins
  13. add tomato sauce
  14. salt and pepper to improve taste
  15. simmer again for another 5-7 mins
  16. add bell pepper
  17. ready to serve

Sounds great. What's Del Monte tomato sauce, filipino style? Does it differ from regular tomato sauce?


Filipinos has this sweet thing on food. That's why we even have our own Filipino style for tomato sauce. :) You can use any tomato sauce available, just add a little sugar to balance. It might become to sour.
