Black Bean Cakes With Chipotle Cream Recipe

Ingredients
  • Bean Cakes:
  • 1 red bell pepper, diced
  • 1/2 c sliced green onions
  • 1/2 c frozen corn kernels, thawed
  • 4 garlic cloves,minced
  • 6 tsp. olive oil, divided
  • 2 cans black beans, rinsed & drained
  • 1 1/2 tsp. cumin
  • 1/2 tsp. dried crushed red pepper
  • 1/4 tsp. salt
  • 1/4 tsp pepper
  • 3/4 cup fine, dry breadcrumbs, divided
  • 3 T chopped fresh cilantro
  • 2 T light mayo
  • 1 large egg, beaten
  • Recipe for Chipotle Cream:
  • 1/2 c light sour cream
  • 2 tsp. fresh lime juice
  • 1 tsp. minced canned chipotle peppers in adobo sauce

Directions
  1. Saute first 4 ingredients in 2 tsp. hot oil in larg nonstick skillet over medium high heat, 5 minutes or until tender. Remove from heat and cool slightly.
  2. Mash 1 1/2 cups black beans in large bowl. Stir in remaining black beans, red pepper mixture, cumin and next 3 ingredients. Add 1/2 cup breadcrumbs, cilantro, mayo and egg, stirring until well blended.
  3. Shape black bean mixture into 8 - 1/2 inch thick patties. Place on wax paper lined baking sheet. Cover and chill 1 hour. Lightly dredge cchilled patties in remaining breadcrumbs.
  4. Cook 4 patties in 2 tsp oil 5 minutes each side or until brown. Remove from skillet, keep warm. Repeat procedure with remaining 4 patties. Serve with Chipotle Cream.
  5. Chipotle Cream:
  6. Stir all ingredients together in a small bowl.
