Black Bean Cakes with Chipotle Cream

- Bean Cakes: shopping list
- 1 red bell pepper, diced shopping list
- 1/2 c sliced green onions shopping list
- 1/2 c frozen corn kernels, thawed shopping list
- 4 garlic cloves,minced shopping list
- 6 tsp. olive oil, divided shopping list
- 2 cans black beans, rinsed & drained shopping list
- 1 1/2 tsp. cumin shopping list
- 1/2 tsp. dried crushed red pepper shopping list
- 1/4 tsp. salt shopping list
- 1/4 tsp pepper shopping list
- 3/4 cup fine, dry breadcrumbs, divided shopping list
- 3 T chopped fresh cilantro shopping list
- 2 T light mayo shopping list
- 1 large egg, beaten shopping list
- Recipe for Chipotle Cream: shopping list
- 1/2 c light sour cream shopping list
- 2 tsp. fresh lime juice shopping list
- 1 tsp. minced canned chipotle peppers in adobo sauce shopping list
How to make it
- Saute first 4 ingredients in 2 tsp. hot oil in larg nonstick skillet over medium high heat, 5 minutes or until tender. Remove from heat and cool slightly.
- Mash 1 1/2 cups black beans in large bowl. Stir in remaining black beans, red pepper mixture, cumin and next 3 ingredients. Add 1/2 cup breadcrumbs, cilantro, mayo and egg, stirring until well blended.
- Shape black bean mixture into 8 - 1/2 inch thick patties. Place on wax paper lined baking sheet. Cover and chill 1 hour. Lightly dredge cchilled patties in remaining breadcrumbs.
- Cook 4 patties in 2 tsp oil 5 minutes each side or until brown. Remove from skillet, keep warm. Repeat procedure with remaining 4 patties. Serve with Chipotle Cream.
- Chipotle Cream:
- Stir all ingredients together in a small bowl.
