Martini Brisket Recipe
A splash of vodka and vermouth plus green olives gives this pepper-crusted beef it's martini flavors You can omit the alcahol;the flavor will be different but just as good.

  • 1 3 to 4lb beef brisket
  • 1 Tbs. mixed peppercorns,coarsely crushed
  • 1Tbs cooking oil
  • 2 med. onions,sliced
  • 1 28oz can crushed tomatoes
  • 1c beef broth
  • 1 Tbs worcestershire sauce
  • 1tbs.fines herbs,crushed
  • 1/2c whipping cream
  • 2Tbs dry vermouth(optional
  • 1Tbs vodka(optional)
  • 1/2c pimiento-stuffed green olives

Directions
  1. Trim fat from beef.Sprinkkle beef with salt and peppercorns. In lg,heavy skillet brown brisket on both sides in ot oil. Remove beef. Add onions to skillet. Cook and stir till tender. Add brisket to the skill;add tomatoes,brothworcestershire,and fines herbs. Bring to boiling;reduce heat. Spoon some of the onion mixture over brisket. Simmer,covered, for 3 hours or till brisket is tender.
  2. To serve,remove brisket from skillet;let stand 10 mins. Meanwhile,skim fat from sauce in skillet. Stir in cream,vermouth and vodka. Bring just to boiling. Remove from heat. Slice brisket;top with olives. serve with sauce.

I made this dish last night and it was delicious. We had it with Pappardelle and will have the leftovers with polenta tonight.
Will definitely make it again (I forgot to add the olives)
