Spicy BBQ Enchiladas

- 1/2 onion shopping list
- 1/2 red pepper shopping list
- 1/2 yellow pepper shopping list
- 6 cherry tomatoes shopping list
- 2 Medium flour tortillas shopping list
- Some grated cheese, Cheddar works well. shopping list
- Bottle of BBQ Sauce shopping list
- 1 Teaspoon smoked paprika shopping list
- Pinch of Chilli Powder shopping list
- olive oil shopping list
How to make it
- Preheat an oven to Gas Mark 6/200c/400f
- Chop the 1/2 onion into smallish peices
- Chop the peppers into long strips
- Chop 3 of the tomatoes in half
- Heat a small amount of olive oil in a frying pan
- Add the chopped ingredients and fry for around 5 mins
- Add a small amount of bbq sauce
- Add the smoked paprika
- Stir and fry for a further 2-3 mins
- Take the frying pan off the heat
- Fill and roll the tortillas with the content of the frying pan
- Add the rolled tortillas into an oven proof dish
- Place your grated cheese on the top of the tortillas
- Add some more bbq sauce
- Bake for 20-25 mins
- Once cooked, Serve with a side of salad or something of your choosing
