Holiday Orange Ambrosia Mold Recipe
People always request the recipe whenever they try it. This is delicious with any meal as a dessert or side dish. It's much creamier without the coconut and so I leave it out.

Ingredients
  • 1 can (8 oz) crushed pineapple, drain and reserve juice
  • 2 c Boiling water
  • 1 can 11 oz mandarin oranges drain
  • 2 pk Orange gelatin, 4 serving each
  • 1 1/2 c Mini marshmallows
  • 12 oz whipped topping
  • 1/2 c flaked Coconut ( optional )

Directions
  1. Prep does not include chilling time
  2. Add drained pineapple juice to water to make one cup and set aside.
  3. Boil two cups water and dissolve in jello.
  4. Stir in the one cup reserved juice and water.
  5. Refrigerate about 1 hour or mixture just starts to jell.
  6. Stir in whipped topping till smooth and refrigerate 10 minutes.
  7. Stir in drained pineapple, drained oranges and marshmallows ( and coconut if using) .
  8. Place in large mold.
  9. Chill 4 hours or until set.
