Ingredients
  • 12 aubergines.
  • 1/2 kg ground meat ( beef or lamb).
  • 2 medium tomatoes chopped.
  • 2 medium onions chopped.
  • 3 tbs parsley chopped.
  • 2 cloves garlic chopped.
  • 3 tbs dry bread crumbs.
  • 1 c tomato sauce.
  • 1 tbs tomato paste.
  • 1 egg slightly beaten.
  • 2/3c grated hard cheese, ( pecorino, parmesan, romano or other).
  • 3 tbs olive oil.
  • 2 tbs salt.
  • 1 c bechamel sauce ( I prefer from a package, but for those who like it recipe follows).
  • For the bechamel:
  • 2 tbs butter.
  • 1/8 ts of pepper.
  • 3 tbs flour.
  • 1 dash ground nutmeg.
  • 1/2 ts salt.
  • 1 c milk.

Directions
  1. Bake aubergines in the oven on 170 C ca 40 min till softened, set aside to cool.
  2. Cut an incision in the aubergines cut out a strip of 1 cm on each side of the incision,and scoop out the flesh , leave a wall of ca 2 cm.
  3. Cook onion and garlic in olive oil till soft not brown, ca 10 min.
  4. Add meat and cook stirring with a fork till browned, ca 10 min.
  5. Add tomato, pasta and sauce, salt , pepper and stirr cook 15 min, pan covered.
  6. Remove from heat, add parsley, egg,aubergine meat, 1/4 c of the cheese and bread crumbs and stirr well.
  7. Fill aubergines with meat mixture.
  8. Prepare bechamel sauce:
  9. Melt butter on low, add flour, salt pepper and nutmeg, stirr to mix.
  10. Remove from heat and gradually stirr in milk.
  11. Cook stirring till thick and smooth, add egg and rest of cheese and stirr to mix well.
  12. Put ca 1 tbs of bechamel mixture on top of meat mixture, sprinkle with cheese and top with butter, bake at 180 c ca 35 min.
  13. Now about ready bechamel sauce, its easy to do add only milk and beat then taste with salt pepper and nutmeg.

Love moussaka I have every time I go to my favorite Greek restaurant. This looks so yummy, Wish I could visit Greece.
