Ingredients
  • 1 package chicken tenderloins
  • 2 packages eggroll wrappers
  • 1 can black beans drained
  • 1 can corn drained
  • 1 can diced green chilis
  • 3 scallions sliced thin
  • diced pickled jalapenos (optional)
  • 1 package taco seasoning
  • 3 cups shredded cheddar jack cheese
  • 1/4 cup mayonnaise
  • Sour cream
  • vegetable oil for frying

Directions
  1. Cook chicken tenderloins and dice very finely
  2. In a large bowl combine all ingredients except eggroll wrappers
  3. Place a heaping tablespoon of mixture in each wrapper and roll as directed
  4. In a large cast iron skillet heat oil and fry eggroll til golden brown
  5. Drain on paper towels
  6. Serve with sour cream for dipping and just enjoy!

Mjcm,

I have baked egg rolls with great results. I lightly brush them with olive oil so they crisp and turn golden, and flip them over once during cooking. 375-400 is usually good depending on how hot your oven runs. Hope this helps!
