Ingredients
  • 2 frozen tilapia fillets, thawed
  • 2 tablespoons extra virgin olive oil
  • 1 lg clove garlic, minced
  • 1 fairly thick slice of white onion, chopped
  • 1/8 teaspoon dried thyme or rosemary, crumbled
  • 2/3 cup Newman's Own Raspberry Vinaigrette dressing
  • 1 zucchini, cut into 8 long strips, then cut each strip into quarters
  • 1/2 cup cooked brown rice

Directions
  1. Cook the brown rice per directions on the package.
  2. In a large skillet, heat the olive oil on medium low.
  3. Add the tilapia fillets and cook until they flake with a fork.
  4. Place the fillets on 2 plates and set aside.
  5. Turn the heat under the pan up to high.
  6. Add the zucchini, garlic, rosemary or thyme, and onion to the pan. (Do not rinse after the fish, it adds to the flavor. DO scrape away any small pieces of fish in the pan. Burnt fish is awful).
  7. Stir briskly until the vegies begin to brown.
  8. Add the dressing all at once.
  9. Heat until bubbly.
  10. Pour 1/4 cup of hot rice over each fillet, then top with vegie-dressing mixture and serve. Delicious!
