Father Orsinis Penne with Very Sharp Provolone

- 2 pounds broccoli florets shopping list
- 4 Tablespoons olive oil shopping list
- 2 oz. pancetta or proscuitto, julienned shopping list
- 1 Tablespoon hot pepper flakes shopping list
- 1 clove garlic, minced shopping list
- 2 Tablespoons white wine shopping list
- 1 pound penne pasta shopping list
- 3 Tablesoons grated very sharp provolone (I always use more!) shopping list
How to make it
- Boil broccoli florets in salted water for 10 minutes. Drain well and set aside.
- In lrge deep skillet, heat olive oil oer moderate heat. Add pancetta, hot pepper flakes and garlic.
- Cook for 5 minutes.
- Adjust heat to high and add broccoli. Saute for 2 minutes.
- Stir in wine. Cook for an additiona 2 minutes and set aside.
- Cook pasta until al dente. Drain wel.
- Transfer to a bowl and toss with broccoli sauce.
- Sprinkle with gratted cheese and serve immediately.
