Father Orsinis Penne With Very Sharp Provolone Recipe
Fr. Orsini wrote some wonderful Italian cookbooks back in the early 90's. This is one of my husband's favorites. you can control the heat and add more or less hot pepper flakes. The flavors are so robust and fresh!

Ingredients
  • 2 pounds broccoli florets
  • 4 Tablespoons olive oil
  • 2 oz. pancetta or proscuitto, julienned
  • 1 Tablespoon hot pepper flakes
  • 1 clove garlic, minced
  • 2 Tablespoons white wine
  • 1 pound penne pasta
  • 3 Tablesoons grated very sharp provolone (I always use more!)

Directions
  1. Boil broccoli florets in salted water for 10 minutes. Drain well and set aside.
  2. In lrge deep skillet, heat olive oil oer moderate heat. Add pancetta, hot pepper flakes and garlic.
  3. Cook for 5 minutes.
  4. Adjust heat to high and add broccoli. Saute for 2 minutes.
  5. Stir in wine. Cook for an additiona 2 minutes and set aside.
  6. Cook pasta until al dente. Drain wel.
  7. Transfer to a bowl and toss with broccoli sauce.
  8. Sprinkle with gratted cheese and serve immediately.
