Ingredients
  • 1(3pound) Chicken,cut up
  • 1 Tablespoon Butter,and a small amount of oil,so as not to burn
  • 1 Tablespoon Water
  • 1/2 teaspoon Salt
  • 1/2 to 3/4 Cup Plum Jelly
  • 1/2 Cup Light Corn Syrup
  • 1/4 Cup Orange Juice
  • 1 Package Long Grain and Wild Rice
  • 2 teaspoons Grated Orange Rind

Directions
  1. Brown the chicken on all sides in the butter and oil.
  2. Add water and salt,cover and cook over low heat until tender,about 45 minutes,turning pieces several times.
  3. Cook the rice according to directions.
  4. Drain fat from the chicken skillet.
  5. Combine jelly,corn syrup and orange juice,stir and pour over chicken.
  6. Heat and spoon sauce over chicken until the chicken is glazed and sauce is thick,about 5 to 10 minutes.
  7. Stir 1 tablespoon grated orange rind into the hot rice.
  8. Serve the glazed chicken and sauce over the rice,sprinkle with 1 tablespoons orange rind.
