Colorful Ribbon Salad

- 1 carrot, washed and peeled shopping list
- 1 seedless cucumber, washed and peeled shopping list
- 1 yellow or green squash, washed and peeled shopping list
- 1 apple, washed and peeled shopping list
- 1 cup finely shredded red cabbage shopping list
- 1 lemon shopping list
- Chopped rosemary, basil, mint, whatever! shopping list
- Crumbled goat cheese shopping list
- Course salt and pepper to taste shopping list
How to make it
- Peel ribbons off each vegetable/fruit until you have about 1/2 cup worth. Try to get long, even peels by applying even pressure with your peeler down the length of the veggie.
- Place ribbons on some paper towels and salt lightly. Allow to sit about 10 minutes
- Pat dry and toss ribbons with cabbage in a bowl. Dress with fresh lemon juice and garnish with chopped, fresh herbs and crumbled goat cheese. Season to taste with salt and pepper.
