How to make it

  • Peel ribbons off each vegetable/fruit until you have about 1/2 cup worth. Try to get long, even peels by applying even pressure with your peeler down the length of the veggie.
  • Place ribbons on some paper towels and salt lightly. Allow to sit about 10 minutes
  • Pat dry and toss ribbons with cabbage in a bowl. Dress with fresh lemon juice and garnish with chopped, fresh herbs and crumbled goat cheese. Season to taste with salt and pepper.
