Mom’s Meat Loaf

Ingredients
- 1 lb ground beef
- 1 can condensed vegetable beef with barley soup.
- 1 egg
- ½ to 1 Cup oat meal (left over rice works well also. If you have left over Spanish rice that turns out very good)
- 1/4 -1/2 Cup left over vegetables Corn, green beans whatever you like
- ½ Cup Catsup
- ¼ cup sautéed onion
- 1/2 package meat loaf seasoning
- 1/2 Cup fresh or dried bread crumbs (if needed)
Directions
- sautéed onion
- Mix all ingredients except the Catsup or chili sauce or BBQ sauce you should have a nice firm loaf if not add more rice, oat meal, or bread crumbs.
- Form into a loaf pan or if it has grown enough a baking pan
- I make a trough on top of the meat loaf and after it is cooked then slather the Catsup on top.
- Cover with aluminum foil
- Cook at 375 for 45 minutes or until done
- Uncover slather the Catsup on top
- Cook an additional 5-10 at 425 this worms up the topping and gives it a nice little crunch to the outside.
- Makes a great sandwich after it is cold.
