How to make it

  • Put a pot of water on the stove and set to high.
  • In a large, deep frying pan, add about 2 tablespoon of extra virgin olive oil.
  • Add a teaspoon of minced garlic, heat until the garlic sizzles a little.
  • Add a bag of fresh baby spinach leaves. Heat should be set to high.
  • Move spinach around, until evenly coated with oil and cover.
  • Thinly slice half a Healthy Choice or alternative low-fat sausage/kielbasa.
  • Add to the spinach.
  • Sauté the spinach/sausage (or kielbasa) until the spinach shrinks.
  • Add a can of diced tomatoes & a drained can of low sodium black beans.
  • Stir and cover, lower heat to medium.
  • Add two bags of 10 minute brown rice to the now boiling water.
  • Cook for 10 minutes.
  • Add to the rice to the sausage/kielbasa)/diced tomatoes/beans.
  • Stir to thoroughly mix.
  • Serve in a bowl with shredded low fat cheddar cheese on top, if desired.
  • Add salt and hot sauce according to taste.
  • Enjoy.

    helewes ate it and said...
    HI...
    I used smoked sausage, regular black beans and cooked ahead of time, some brown rice. I used what I had on hand and thought it was pretty good.
