Ingredients
  • 3# beef brisket
  • 24 ounces(2 bottles) Guinnes beer
  • 2 cups water
  • 2 bay leafs
  • 10 pepper corns
  • 1/2 cup chopped parsley
  • 2 TDS. olive oil
  • 3 large cloves of garlic- slicid
  • 3 large leaks-chopped
  • 1 yellow onion-sliced
  • 1# carrots-sliced
  • 1# small red potatoes
  • 1# turnips-quartered
  • 1 head of green cabbage-cut into 6 wedges and secured with toothpicks to prevent from falling apart

Directions
  1. In a LARGE stock pot,add beef,beer,water,bay leaf,peppercorns,parsley and salt to taste. place over high heat to bring to a boil,meanwhile saute onions,garlic and leaks in olive oil for 5 minutes and add to pot,cover and simmer for 3 hours
  2. in last 25 minutes of cooking,add remaining ingredients
  3. serve with cool, not cold, guinnes
  4. I TRIED TO FIX SOME TYPOS BUT THIS SITE IS SCREWED UP...BOB
