How to make it

  • In a LARGE stock pot,add beef,beer,water,bay leaf,peppercorns,parsley and salt to taste. place over high heat to bring to a boil,meanwhile saute onions,garlic and leaks in olive oil for 5 minutes and add to pot,cover and simmer for 3 hours
  • in last 25 minutes of cooking,add remaining ingredients
  • serve with cool, not cold, guinnes
  • I TRIED TO FIX SOME TYPOS BUT THIS SITE IS SCREWED UP...BOB

    now you are not to take this wrong, ok, this is fantastic and reminds me of Aunty Ann's sunday dinner when she did a pot roast, cos some times it was turkey and ham, right in Ireland they seldom use beer in a recipe unless it goes, take a glass and fill it with beer ;-), the Guiness is going to be used for cooking ok but not in the cooking, it will be in a glass near the cooker but not too close because we don't like warm beer!and we don't do garlic unless it is "garlic bread from the take away Chinese", and what! is a yellow onion?, onions and potato's are white!, not red or any other colour, usually boiled in their skins and served on a side plate.
