- 1 onion, PEELED AND CHOPPED shopping list
- 1 TBSPN olive oil shopping list
- 1/2 TEASPOON CHILLI POWDER shopping list
- 2 cloves OF garlic, PEELED AND PRESSED shopping list
- 15 OZ CAN OF chickpeas shopping list
- 5 OZ CAN sweetcorn, DRAINED shopping list
- 14 OZ. CANN plum tomatoes shopping list
- 1 TBSPN fresh coriander CHOPPED shopping list
How to make it
- FRY ONION IN A LITTLE OIL FO 10 MINUTES
- ADD CHILLI AND GARLIC AND FRY FOR FURTHER MINUTE.
- ADD CHICKPEAS WITH THEIR LIQUID, SWEETCORN AND TOMATOES
- BRING TO BOIL
- BREAK UP TOMATOES QITH WOODEN SPOON AND ALLOW TO SIMMER FOR 20 MINUTES UNTIL LIQUID HAS REDUCED AND FLAVOURS MINGLED
- SPRINKE WITH CORIANDER
- SERVE WITH PLAIN RICE.
