How to make it

  • Peel the onions
  • place them in a pot of cold water and bring to the boil
  • reduce the heat and simmer for 10min
  • once cooked remove and halve the onions,lengthwise, remove roots at this point
  • meanwhile cut the corn from the cob
  • and boil gently for 5-8 min with out any salt (salt hardens the corn)
  • fry the bacon in a little olive oil till crisp
  • finely slice the gem lettuce
  • once the corn is cooked drain and place in a large bowl
  • add about 1/4 cup of the corn water back to the corn
  • add the onions and butter
  • stir
  • stir in bacon
  • only add the lettuce when ready to serve
  • season with salt and pepper
