Sweetcorn Surprise

- 8 young corn on the cob (sweetcorn) shopping list
- 10 baby onions shopping list
- 4 rashers smoked back bacon, cubed shopping list
- 3gem lettuce shopping list
- 50g butter shopping list
- olive oil shopping list
- salt and pepper shopping list
How to make it
- Peel the onions
- place them in a pot of cold water and bring to the boil
- reduce the heat and simmer for 10min
- once cooked remove and halve the onions,lengthwise, remove roots at this point
- meanwhile cut the corn from the cob
- and boil gently for 5-8 min with out any salt (salt hardens the corn)
- fry the bacon in a little olive oil till crisp
- finely slice the gem lettuce
- once the corn is cooked drain and place in a large bowl
- add about 1/4 cup of the corn water back to the corn
- add the onions and butter
- stir
- stir in bacon
- only add the lettuce when ready to serve
- season with salt and pepper
