Zucchini Bisque With Crabmeat Recipe
A warm, creamy soup that stands up to using imperfect ingredients.

Ingredients
  • 1 medium onion, diced
  • 2 Tbsp butter
  • 3 medium zucchini, diced
  • 1 potato, diced
  • 5 c chicken stock
  • 1 sprig fresh thyme
  • 2 c heavy cream
  • 1/2 c lump crabmeat
  • chives
  • salt and pepper

Directions
  1. Fry onion in butter until clear.
  2. Add zucchini and potatoes, fry for a few minutes.
  3. Add stock, thyme, and salt & pepper.
  4. Simmer 30 minutes.
  5. Transfer to a blender and blend until smooth. Return to the pot.
  6. Add cream and crabmeat.
  7. Bring to a boil, and serve.
