Moist Coconut Pie

- 4 eggs shopping list
- 125 g softened butter ( a bit over a stick of butter ) shopping list
- 1/2 cup plain flour ( all purpose ) shopping list
- 1/2 cup milk shopping list
- 1 cup castor sugar ( superfine sugar ) shopping list
- 1 cup shredded coconut shopping list
- 400 ml can coconut milk shopping list
How to make it
- Blend or process all ingredients until smooth.
- Pour into greased pie plate, bake in moderate oven 1 hour.
- Cool to room temperature, turn onto serving plate.
- If desired, decorate with whipped cream, glace cherries and toasted coconut.
- Put the pie in the fridge for few hours.
- Serve it cold with strawberry sauce.
