How to make it

  • Heat the vegetable oil in a large pan, adding just enough to cover the bottom of the pan.
  • Make a roux by adding 3 Tblsp of the flour, stirring contantly to mix.
  • Stir constantly until the mixture turns to a deep golden brown color.
  • Add the peppers, onions and celery, cook until tender (2-3 minutes).
  • Add the broth, tomatoes, tofu and the rest of the seasonings.
  • Mix to coat everything with the sauce and cover with a lid.
  • Simmer for 30 minutes, stirring occasionally.
  • Discard the bay leaves before serving and serve with white rice and sprinkle with parsley for garnish.
