Yemenite New Year Soup

- 3 - pounds beef ribs or stewing meat ( fat removed) shopping list
- 2- veal shanks shopping list
- 1- large chicken cleaned and quartered shopping list
- 10- 12- cloves of garlic, unpeeled shopping list
- 9- small white onions shopping list
- 1- large turnip, chopped shopping list
- 4- leeks or 8 green onions , coarsley cut shopping list
- 3- celery stalks, chopped shopping list
- 1- medium zucchini peeled and cubed shopping list
- 3- carrots, chopped shopping list
- 1 - large tomato, quartered shopping list
- 3- potatoes, peeled and diced shopping list
- 1- bunch of fresh parsley chopped, or fresh cilantro shopping list
- 1-tablespoon of a mixture ...of cumin, coriander,curry powder, ginger, black pepper, tumeric, and salt to taste shopping list
How to make it
- Place the beef , veal and chicken in a large pot with enough water to cover them.
- bring to a boil, lower the heat, simmer, until a froth forms.
- remove the froth and the chicken from the soup.
- remove the chicken meat from the bones.
- lower the heat and add the unpeeled garlic cloves (left in there skins), they wont soften in cooking
- add the onion , turnip, and leeks or green onions.
- simmer, covered for about 1-1/2 hours or until the meat is very tender.
- lift the meat out of the soup.
- remove all bones and return the meat to the broth.....
- cover and simmer another 20 minutes.....
- let cool and refrigerate overnight.
- the next day , remove the garlic skins........
- and bring the soup to a boil
- add the celery, zucchini, carrots, tomato and potatoes...
- lower the heat , cover and simmer 20 minutes.
- just before serving , add the parsley and the spices and salt to taste cook uncovered just for a few minutes more ...adjust the seasonings prior to serving
- serves 6-8
