How to make it

  • Place the beef , veal and chicken in a large pot with enough water to cover them.
  • bring to a boil, lower the heat, simmer, until a froth forms.
  • remove the froth and the chicken from the soup.
  • remove the chicken meat from the bones.
  • lower the heat and add the unpeeled garlic cloves (left in there skins), they wont soften in cooking
  • add the onion , turnip, and leeks or green onions.
  • simmer, covered for about 1-1/2 hours or until the meat is very tender.
  • lift the meat out of the soup.
  • remove all bones and return the meat to the broth.....
  • cover and simmer another 20 minutes.....
  • let cool and refrigerate overnight.
  • the next day , remove the garlic skins........
  • and bring the soup to a boil
  • add the celery, zucchini, carrots, tomato and potatoes...
  • lower the heat , cover and simmer 20 minutes.
  • just before serving , add the parsley and the spices and salt to taste cook uncovered just for a few minutes more ...adjust the seasonings prior to serving
  • serves 6-8
