Ingredients
  • 3 - pounds beef ribs or stewing meat ( fat removed)
  • 2- veal shanks
  • 1- large chicken cleaned and quartered
  • 10- 12- cloves of garlic, unpeeled
  • 9- small white onions
  • 1- large turnip, chopped
  • 4- leeks or 8 green onions , coarsley cut
  • 3- celery stalks, chopped
  • 1- medium zucchini peeled and cubed
  • 3- carrots, chopped
  • 1 - large tomato, quartered
  • 3- potatoes, peeled and diced
  • 1- bunch of fresh parsley chopped, or fresh cilantro
  • 1-tablespoon of a mixture ...of cumin, coriander,curry powder, ginger, black pepper, tumeric, and salt to taste

Directions
  1. Place the beef , veal and chicken in a large pot with enough water to cover them.
  2. bring to a boil, lower the heat, simmer, until a froth forms.
  3. remove the froth and the chicken from the soup.
  4. remove the chicken meat from the bones.
  5. lower the heat and add the unpeeled garlic cloves (left in there skins), they wont soften in cooking
  6. add the onion , turnip, and leeks or green onions.
  7. simmer, covered for about 1-1/2 hours or until the meat is very tender.
  8. lift the meat out of the soup.
  9. remove all bones and return the meat to the broth.....
  10. cover and simmer another 20 minutes.....
  11. let cool and refrigerate overnight.
  12. the next day , remove the garlic skins........
  13. and bring the soup to a boil
  14. add the celery, zucchini, carrots, tomato and potatoes...
  15. lower the heat , cover and simmer 20 minutes.
  16. just before serving , add the parsley and the spices and salt to taste cook uncovered just for a few minutes more ...adjust the seasonings prior to serving
  17. serves 6-8
