Potato Mushrooms

- 2 boiled potatoes shopping list
- oil for frying shopping list
- saffron or turmeric shopping list
How to make it
- Cut a cylinder from a boiled potato, which will be the stem.
- Cut the second potato in half, and scoop out some of the meat so it will sit nicely on the cylinder.
- Fry the second potato that you have scooped and fitted in very hot deep oil, to get it a little browned.
- Place the fried potato piece atop the cylinder, and sprinkle with either saffron or turmeric for a realistic look.

If you have an apple peeler slicer (Pampered Chef) you can make these on there. Peel, core and slice only half way. Of course, this is before cooking them. Haven't thought of making these for years. Thanks for the reminder! 5
