Ingredients
  • 2 eggs
  • 1 cup of milk
  • 1 cup of flour
  • 1/4 teaspoon of salt
  • 1 tablespoon of melted butter
  • This is a fine popover made just like this, but it becomes extraordinary when you use melted duck fat instead of the butter and add a 1/2 teaspoon of powdered mushroom.

Directions
  1. Beat two eggs until foamy.
  2. Do not separate.
  3. Add milk and combine with flour sifted with salt.
  4. Beat just enough to mix and add the melted butter.
  5. Pour into greased hot muffin tins.
  6. Cast iron are best.
  7. Bake 20 minutes at 450 degrees;
  8. reduce heat to 350 and bake for 10 minutes more.

Love the Toad in a Hole idea, notcho - gotta try that! We love popovers (I was raised on them, too - sky high and dripping with butter and jam)...yum!

Alterations


You could pour this over fried sausages in a cast iron skillet and call it "toad in a hole." Really puffs like a Yorkshire pudding with the crispy sausauge underneath. So yummy.
