Shrimp and Octopus Soup

- 2 quarts water shopping list
- 2 pounds octopus, cut into 1 inch pieces shopping list
- 1 tablespoon vegetable oil shopping list
- 1 cup diced carrots shopping list
- 1 cup diced celery shopping list
- 2 cups cubed potatoes shopping list
- 1/2 cup crushed dry pasilla chile peppers shopping list
- 1/2 cup chopped onion, or to taste shopping list
- 1 teaspoon ground cumin shopping list
- 1teaspoon dried oregano, crushed shopping list
- 1 cup diced tomato shopping list
- 1 1/2 pounds large shrimp in shells shopping list
- 1 cup fresh corn kernels -- a most in everything i eat shopping list
- 1/4 cup cilantro, minced shopping list
- salt and black pepper to taste shopping list
How to make it
- Place water in large soup pot.
- Bring to boil over medium-high heat.
- Add octopus and continue boiling about 20 minutes.
- While octopus is boiling, heat oil in skillet over medium-high heat.
- Add carrots, celery, potatoes, and pasilla pepper.
- Fry about 15 minutes.
- Add onion and tomato and fry 1 more minute. The ingredients do not need to be fully cooked.
- Add corn and shrimp in shells to octopus.
- Let boil 5 minutes.
- Add vegetables, cumin, and oregano from skillet.
- Season with salt and black pepper to your liking.
- Let everything simmer together for 15 minutes.
- Garnish with cilantro and serve.
