How to make it

  • Place water in large soup pot.
  • Bring to boil over medium-high heat.
  • Add octopus and continue boiling about 20 minutes.
  • While octopus is boiling, heat oil in skillet over medium-high heat.
  • Add carrots, celery, potatoes, and pasilla pepper.
  • Fry about 15 minutes.
  • Add onion and tomato and fry 1 more minute. The ingredients do not need to be fully cooked.
  • Add corn and shrimp in shells to octopus.
  • Let boil 5 minutes.
  • Add vegetables, cumin, and oregano from skillet.
  • Season with salt and black pepper to your liking.
  • Let everything simmer together for 15 minutes.
  • Garnish with cilantro and serve.

    OK... love everything about this recipe except the non peeled shrimp. Why do they have to be in shell? I hate the texture of them as much as fish bones. Is it really necessary? Otherwise a 5! Mare
