How to make it

  • Blanche the 4 cabbage leaves and set aside in some cold water.
  • Peel and cut the butternut and three sweet potatoes in chunks.
  • Boil these until soft.
  • Mash with the 30ml butter, cream and thyme.
  • Season well with salt and pepper.
  • Scoop a dollop onto each cabbage leaf and wrap it like a gift.
  • Place parcels, folded side down, on a baking tray.
  • Dot with butter.
  • Sprinkle with the breadcrumbs and some grated parmesan cheese.
  • Grill for 5 minutes and serve.
