Ingredients
  • 4 large Cabbage leaves
  • 1 Butternut
  • 3 Sweet Potatoes
  • 30ml (2T) butter
  • 10ml (2t) Fresh Thyme Leaves
  • 45ml (3T) Cream
  • 50g Breadcrumbs (2oz)
  • Grated Parmesan to Taste

Directions
  1. Blanche the 4 cabbage leaves and set aside in some cold water.
  2. Peel and cut the butternut and three sweet potatoes in chunks.
  3. Boil these until soft.
  4. Mash with the 30ml butter, cream and thyme.
  5. Season well with salt and pepper.
  6. Scoop a dollop onto each cabbage leaf and wrap it like a gift.
  7. Place parcels, folded side down, on a baking tray.
  8. Dot with butter.
  9. Sprinkle with the breadcrumbs and some grated parmesan cheese.
  10. Grill for 5 minutes and serve.
