How to make it

  • Make a roux with the oil and flour.
  • Saute fresh ingredients in roux.
  • Combine all other ingredients(except chicken) and bring to a boil.
  • Cover, lower heat, and cook on low heat until almost done (1 1/2-2 hours).
  • Add cooked chicken and continue to simmer fo an additional 3-45 minutes.
