Chicken and Sausage Gumbo

- 1 whole chicken, seasoned to taste, boiled and deboned (reserve broth) shopping list
- 1/2-lb smoked sausage of your choice, cut into bite sized peices shopping list
- 1 large onion, chopped shopping list
- 1 bell pepper, chopped shopping list
- 4-ribs celery, chopped shopping list
- 1 bunch of green onions, chopped shopping list
- 1 tspn minced garlic shopping list
- 2-tspn black pepper shopping list
- 1-tbspn salt shopping list
- 1-tspn paprika shopping list
- 1-(8-oz)can tomato sauce shopping list
- 1(10-oz)can Rotel tomatoes (Original) shopping list
- reserved chicken broth plus addition Swanson chicken broth to equal 8-10 cups(depending on your taste) shopping list
- 1-cup chopped okra ( I usually have to use frozen but fresh is best) shopping list
How to make it
- Make a roux with the oil and flour.
- Saute fresh ingredients in roux.
- Combine all other ingredients(except chicken) and bring to a boil.
- Cover, lower heat, and cook on low heat until almost done (1 1/2-2 hours).
- Add cooked chicken and continue to simmer fo an additional 3-45 minutes.
