This enchilada sauce was created to go over the top of my chicken enchilada recipe, also listed on this site. My husband and I just love it.

Ingredients
  • 1/4 cup vegetable shortening
  • 1/4 cup flour
  • 2 tablespoons chili powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2 cups water
  • 16 ounces tomato sauce
  • 3 teaspoons beef granules

Directions
  1. In skillet heat shortening until melted.
  2. Add flour and cook until lightly browned (be careful not to overcook)
  3. Add seasonings to make a paste.
  4. Gradually add water.
  5. Add tomato sauce and beef granules and mix well.
  6. Use immediately or freeze for future use.

Very nice sauce, I'll go check out the enchiladas, too. You could probably use butter instead of shortening.
