How to make it

  • Peel and slice eggplant; cut in cubes.
  • Cook until tender; drain; add butter, eggs, bread cut in small blocks, salt, pepper, onions, and cheese cut in blocks.
  • Pour in greased casserole; sprinkle crumbs on top; bake 20 to 30 minutes at 350 degrees.
